here's the recipe Monica's referring to:

this recipe is great when you have old bananas that need to be used up, because
it uses a lot more bananas than your standard banana bread ... and the texture, crumb and flavor are incredible. The sour cream makes this cake so good.


FRESH BANANA CAKE

1/4 Pound Butter
1 1/2 Cups Sugar
1 Cup Bananas -- mashed (about 3)
2 Eggs
1 tsp Vanilla
2 Cups Cake flour (I just use regular AP white wheat)
1 tsp Baking soda
1/2 tsp Salt
1/2 Cup Sour cream (I use non-fat)

Preheat the oven to 350F. Butter and lightly flour a 9-inch square
cake pan. Cream the butter, slowly add the sugar, and beat until
light. Add the bananas, eggs, and vanilla and beat well. Mix the
flour, baking soda, and salt, add to the first mixture, and blend.
Slowly add the sour cream and beat until well blended. Spread in the
pan and bake for about 45 minutes, or until a toothpick comes out
clean. Cool in the pan for 5 minutes before turning out onto a rack.

They give a recipe for frosting, but when I make it, I just liberally sprinkle some cinnamon-sugar across the top before I put it in the oven.

Good Morning folks. Lynn's been a little under the weather this week. The things kids bring to school. I am amazed we aren't both sick constantly. I snuck downstairs and put the earbuds in so as not to disturb sleeping beauty.

Of all the things I've lost in my life, I miss my mind the most!

Mornin' Arden, great tune by Willie. Hope all is well with you and yours. Heading back to Napa for my dogs second round of chemo, next Wednesday. She's doing fine after one course. Wife's staying up there with her, the dog (gertie b) loves running around on the 20 acres our friends own, with their two dogs, 3 cats, 8 horses. Me I'm lonely down here.Big Grin

It has been a while since I caught the Sunday am show. Lynn and I have been trying to travel weekends to little adventures in the nearby area. Both for business and pleasure.
The young lady that works the shop for me on weekends went to the snow this weekend, so I am working 12 straight. Ugh, haven't done that in ages!

Of all the things I've lost in my life, I miss my mind the most!

The week was very busy. I sold my bird, though he is still with me till next weekend. We went to a dance performance at the High School. Kayla will be auditioning next week to join for the coming school year. She is very excited.
